We finally got our hands on some delicious local peaches this summer and were stoked to make a cobbler. With a new baby we don’t have a lot of time, so this is the perfect dessert to whip up in-between naps. It is truly the EASIEST cobbler recipe. We were even able to use ingredients that we already on-hand which is another major plus. 

Cobbler recipes are like family mottos – everyone’s got their own version near and dear to their heart. We like ours super simple and to the point. Some of our favorite recipes are the easiest to make but the most rewarding to enjoy! And besides, it’s the quality ingredients that will truly make any recipe shine. So let’s get to it!

First, start off with quality peaches. The more local, the better. Make sure you wait until they are fragrant and soft (but not too much). We used some peaches my mom gave us and waited almost too late to make the cobbler – but thank goodness they were still juicy and delicious. 

THE RECIPE:

Peel and slice 6-8 peaches (about 4 cups worth). Stir in a fresh squeeze of lemon juice (about 1 Tbsp.).

Preheat your oven to 375 degrees F. 

About halfway through pre-heating, add ½ C. of butter into a 9” x 13” baking dish and pop into the oven to melt. Keep an eye on it to make sure it melts but doesn’t brown.

In the meantime, mix together these dry ingredients in a bowl: 

1 C. flour

1 C.  sugar

1 Tbsp. baking powder

Pinch of salt

Slowly add in 1 C. of milk and stir mixture until all ingredients are wet (careful not to over-mix). 

Pull out your melted butter and make sure it’s evenly distributed in the dish then pour the batter mixture overtop. 

Evenly add the peach slices on top of the batter and sprinkle with cinnamon to your taste.

Bake for about 40-45 minutes or until golden brown. 

Let cool for 5-10 minutes, then enjoy immediately with a fresh mint sprig or a la mode (our favorite).
