Easiest Peach Cobbler

Ingredients
  

  • 6-8 peaches very ripe
  • 1 tbsp lemon juice
  • 1/2 cup butter
  • 1 cup flour
  • 1 cup sugar
  • 1 tbsp baking powder
  • 1 pinch salt
  • 1 sprinkling cinnamon optional

Instructions
 

  • Peel and slice 6-8 peaches (about 4 cups worth). Stir in a fresh squeeze of lemon juice (about 1 Tbsp.).
  • Preheat your oven to 375 degrees F.
  • About halfway through pre-heating, add ½ C. of butter into a 9” x 13” baking dish and pop into the oven to melt. Keep an eye on it to make sure it melts but doesn’t brown.
  • In the meantime, mix together the dry ingredients in a bowl.
  • Slowly add in 1 C. of milk of stir mixture until all ingredients are wet (careful not to overmix).
  • Pull out your melted butter and make sure it’s evenly distributed in the dish then pour the batter mixture overtop.
  • Evenly add the peach slices on top of the batter and sprinkle with cinnamon to your taste.
  • Bake for about 40-45 minutes or until golden brown.
  • Let cool for 5-10 minutes, then enjoy immediately with a fresh mint sprig or a la mode (our favorite).
